The Catering Operations team develops, creates and provides the great dining experiences on board our aircraft.

Job overview and responsibilities

The primary responsibility of the Manager Catering Operations will be to serve as PM Manager on Duty, managing multiple key functional departments and overseeing entire kitchen on the PM / Graveyard shift. Responsible for safety, financial, operational, quality and regulatory performance of the assigned departments and at times, entire kitchen. Oversees the staff, manages resources, schedules and performance issues. Responsible for production schedules, timeliness and quality of the product. Serves as key resource and leader for all operational areas of the kitchen on PM /GY shift.

  • Manager on Duty on routine basis for PM/GY shift and coordinates production schedules with all departments to meet overall operational needs of the kitchen

  • Supervises shift managers and employees, responsible for employee scheduling, attendance, payroll, accident investigation and safety awareness

  • Responsible for kitchen quality, productivity, overall performance, food safety compliance, regulatory compliance and departmental safety programs while on duty

  • Establishes department goals and objectives to support kitchen and corporate initiatives

  • Participates as a key member of the kitchen leadership team to ensure corporate and local policy and procedures are implemented and maintained

  • Participates with kitchen and corporate resources to implement Lean processes and objectives into the production process


  • Kitchen environment, including working in temperatures of 41 deg F

  • Knowledge of catering operations

  • Strong leadership skills

  • Ability to work in a high paced environment and in temperature controlled (cold) production areas

  • Ability to effectively work with all levels of the organization, employees and outside suppliers

  • Excellent written and verbal communications skills

  • Strong computer skills including use of email, Word, Excel and PowerPoint

  • Ability to work various shifts within a 24/7 operation, including weekends and holidays

  • Bachelor’s Degree in Management, Business Administration, or similar or equivalent years of experience

  • 3+ years in catering / food services operations

  • 3+ years in progressive leadership positions

  • Must be legally authorized to work in the United States for any employer without sponsorship

  • Successful completion of interview required to meet job qualification

  • Reliable, punctual attendance is an essential function of the position


  • Lean Manufacturing / Continuous Improvement experience

  • Lean Six Sigma Certification

  • MBA
